Lightened Up Zuppa Toscana Soup

This soup is so delicious and even better that you don’t have to sacrifice a ton of calories for this meal. Great for leftovers too!

Ingredients

  • 1 lb. ground turkey sausage

  • 6 slices cooked turkey bacon

  • 1 medium yellow onion, chopped

  • 1 TBSP garlic, minced

  • 6 cups organic chicken broth

  • 4 medium potatoes, chopped

  • 1/2 tsp crushed red pepper flakes

  • 4 cups chopped kale

  • 1/2 tsp sea salt (more if needed)

  • 1/4 tsp pepper

  • 1 can full fat coconut milk

Directions:

  1. To a pan, add onion, garlic & ground turkey sausage. Cook and set aside.

  2. Chop turkey bacon into small pieces.

  3. In a large pan, add chicken broth & chopped potatoes. Boil until potatoes are tender.

  4. Add cooked sausage, bacon, spices & stir well.

  5. Add can of coconut milk.

  6. Mix in chopped kale.

  7. Add salt & pepper as needed.

  8. Could do sweet potato (or leave out) and add riced cauliflower if following the elimination diet/anti-inflammatory diet.
