Lightened up Zuppa Toscana soup

This soup is so delicious and even better that you don’t have to sacrifice a ton of calories for this meal. Great for leftovers too!

Ingredients

1 lb ground turkey sausage

6 slices cooked turkey bacon

1 medium yellow onion, chopped

1 TBS garlic, minced

6 c organic chicken broth

4 medium potatoes, chopped

1/2 tsp crushed red pepper flakes

4 cups chopped kale

1/2 tsp sea salt( more if needed)

1/4 tsp pepper

1 can full fat coconut milk

Directions:

  • To a pan, add onion, garlic & ground turkey sausage. Cook and set aside.

  • Chop turkey bacon into small pieces.

  • In a large pan, add chicken broth & chopped potatoes. Boil until potatoes are tender.

  • Add cooked sausage, bacon, spices & stir well.

  • Add can of coconut milk.

  • Mix in chopped kale.

  • Add salt & pepper as needed.

  • Could do sweet potato(or leave out) and add riced cauliflower if following the elimination diet/ anti-inflammatory diet.
