Gluten Free Chicken Noodle Soup

This soup is so delicious and the perfect comfort food with great macros too! Not gluten free? You can swap for regular noodles.

Ingredients

  • 1/2 TBSP olive oil

  • 12 oz. shredded chicken breasts, cooked

  • 1/2 cup carrots, chopped

  • 1/2 cup celery, chopped

  • 1/2 yellow onion, chopped

  • 1 clove garlic, minced

  • 2 carton chicken bone broth

  • 1 cup water

  • 2 tsp GF chicken bouillon or seasoning

  • 1/2 tsp thyme

  • 1/4 cup fresh parsley, chopped

  • 1/4 tsp oregano

  • 1/2 - 1 tsp salt to taste

  • 1/2 tsp pepper

  • 8 oz. dry gluten free egg noodles (I get mine from Moms place),

  • 1/2 a lemon fresh squeezed

Directions:

  1. Cook chicken and shred (boil in water and use mixer for easy shred).

  2. Add garlic to a soup pan and sauté. Add broth, veggies and all spices.

  3. Boil about 5-10 min. or until veggies have softened.

  4. Add noodles (about 10 min until tender).

  5. Squeeze lemon juice into soup.

  6. Add salt and pepper to taste
