Gluten Free Chicken Noodle Soup

This soup is so delicious and the perfect comfort food with great macros too! Not gluten free? You can swap for regular noodles.

Ingredients

1/2 TBS olive oil

12 oz shredded chicken breasts, cooked

1/2 c carrots, chopped

1/2 c celery, chopped

1/2 yellow onion, chopped

1 clove garlic, minced

2 carton chicken bone broth

1 C water

2 tsp gf chicken bouillon or seasoning

1/2 tsp thyme

1/4 c fresh parsley, chopped

1/4 tsp oregano

1/2 -1 tsp salt to taste

1/2 tsp pepper

8 oz dry gluten free egg noodles( I get mine from Moms place),

1/2 a lemon fresh squeezed

Directions:

  • Cook chicken and shred( boil in water and use mixer for easy shred).

  • Add garlic to a soup pan and sauté. Add broth, veggies and all spices.

  • Boil about 5-10 min or until veggies have softened.

  • Add noodles( about 10 min until tender).

  • Squeeze lemon juice into soup.

  • Add salt and pepper to taste
