Mexican Lasagna- Gluten and Dairy Free

This is the perfect comfort food meal and so easy to make too. Let me know if you make it and like it……..

Ingredients

  • 12 corn tortillas (or 10 small GF flour)

  • 1 lb. lean 97% ground beef (or ground turkey)

  • 1 can red enchilada sauce

  • 1 can nonfat refried beans

  • 1 can mild green chilies

  • 1/2 cup dairy free cheese (use regular, low-fat if not dairy free)

  • 1 small can sliced olives

  • 1 can diced chilis

  • Gluten free taco seasoning

  • cilantro/lettuce for topping

  • Salsa (topping)

Directions:

  • Preheat oven to 375.

    Cook ground beef, Add GF taco seasoning.

    Spray 9x13 glass pan with cooking spray. Line pan with 6 tortillas. Spread beans and green chilies. Repeat with another layer.

  • Over the tortillas, spread can of enchilada sauce. Top with ground beef, cheese and olives. Cook for 20 min. Top with shredded lettuce and salsa if you want.
