Protein Snickers Bark (DF/GF)

These can be beneficial for someone with Hashimoto’s Disease. Rich in fiber, potassium, magnesium, healthy fats, selenium. They are the perfect sweet treat.

Ingredients

  • 20 pitted dates

  • 1/4 cup nut butter, no sugar added (I used sunflower seed butter)

  • 2 TBSP PB2 powder

  • 6 TBSP water

  • 1 scoop protein powder

  • 5 Brazil nuts, chopped(or other nut)

  • 6 TBSP Enjoy Life dairy free chocolate chips

  • 1/2 tsp coconut oil

  • pinch of sea salt

Directions:

  1. Using an 8x8 pan, add parchment paper to bottom of pan.

  2. Peel dates apart and lay(stick side down) onto parchment paper, 4 in a row (5 rows). Press into pan. Could use the bottom of a cup to press into pan.

  3. In a bowl, mix 1/2 scoop protein powder, water, PB2 powder & nut butter. Mix well and spread over the layer of dates. Chop Brazil nuts and add to layer. Freeze.

  4. In a bowl, mix chocolate chips, coconut oil. Microwave for 15 seconds at a time and stir well. Repeat until thin mixture. Add 1/2 scoop protein powder and mix well. Take pan out of freezer and add chocolate to top. Top w/ sea salt.

  5. Freeze again. Cut into 12 squares(or 24 for better macros). Store in freezer.
