Protein Snickers bark(DF/GF)

These can be beneficial for someone with hashimotos disease. Rich in fiber, potassium, ,magnesium, healthy fats, selenium and they are the perfect sweet treat……...

Ingredients

  • 20 pitted dates

  • 1/4 C nut butter, no sugar added( I used sunflower seed butter)

  • 2 TBS PB2 powder

  • 6 TBS water

  • 1 scoop protein powder

  • 5 Brazil nuts, chopped

  • 6 TBS enjoy life chocolate chips

  • 1/2 tsp coconut oil

  • pick sea salt

Directions:

  • Using an 8x8 pan, add parchment paper to bottom of pan.

  • Peel dates apart and lay onto parchment paper, 4 in a row(5 rows). Press into pan. Could use the bottom of a cup to press into pan.

  • In a bowl, mix 1/2 scoop protein powder, water & nut butter. Mix well and spread over the layer of dates. Chop Brazil nuts and add to layer. Freeze.

  • In a bowl, mix 1/2 scoop protein powder, chocolate chips, coconut oil. Microwave for 15 seconds at a time and stir well. Repeat until thin mixture. Take pan out of freezer and add chocolate to top. Top w/ sea salt.

  • Freeze again. Cut into 12 squares. Store in freezer.
