Butternut Squash Chili

A hearty and delicious, anti inflammatory and high protein soup.
Ingredients
1/2 small onion, chopped
1 jalapeño, diced small
1 TBSP olive or avocado oil
3 cloves garlic, minced
1 can diced green chilies
1/2 bunch cilantro, chopped
2 cups diced butternut squash
1/2 chopped red pepper
1/2 tsp cumin
1/2 tsp chili powder
1 tsp paprika
1 tsp salt
1 can organic lentils, drained and rinsed
13 oz. diced cooked chicken
5 cups chicken bone broth
Directions
In a large pan, add avocado oil, onion, garlic, jalapeño, red peppers, until translucent.
Add bone broth, cilantro, spices and butternut squash. Cook about 15 min. until squash is tender.
Add lentils, green chillies and diced chicken. Cook an additional 10 min.
Salt and pepper to taste. Could top with avocado and more cilantro.
