Butternut Squash Chili

A hearty and delicious, anti inflammatory and high protein soup.

Ingredients

  • 1/2 small onion, chopped

  • 1 jalapeño, diced small

  • 1 TBSP olive or avocado oil

  • 3 cloves garlic, minced

  • 1 can diced green chilies

  • 1/2 bunch cilantro, chopped

  • 2 cups diced butternut squash

  • 1/2 chopped red pepper

  • 1/2 tsp cumin

  • 1/2 tsp chili powder

  • 1 tsp paprika

  • 1 tsp salt

  • 1 can organic lentils, drained and rinsed

  • 13 oz. diced cooked chicken

  • 5 cups chicken bone broth

Directions

  • In a large pan, add avocado oil, onion, garlic, jalapeño, red peppers, until translucent.

  • Add bone broth, cilantro, spices and butternut squash. Cook about 15 min. until squash is tender.

  • Add lentils, green chillies and diced chicken. Cook an additional 10 min.

  • Salt and pepper to taste. Could top with avocado and more cilantro.
