High Protein Butternut Squash Soup

This soup is packed full of fiber, protein and gut boosting ingredients. The perfect hearty soup that will fill you up while keeping macros in balance.
Ingredients:
1/2 TBSP olive or avocado oil
3 cloves garlic, minced
1/2 white onion, chopped
1/2 bunch cilantro, chopped
4 cups diced butternut squash, cubed(could use frozen)
3/4 cup red lentils
1.5 tsp salt
1 TBSP red curry paste
1 TBSP chopped fresh ginger
1/2 tsp pepper
1 lime, juiced
1 lb. diced cooked chicken
6 cups chicken bone broth
1 can coconut cream
Directions:
In a large pan, add avocado oil, onion, garlic, ginger and chili paste and cook until translucent.
In a pan, cook chicken (add seasonings), chop into bite sized pieces. Set aside.
To pan with onion and garlic, Add bone broth, cilantro, spices and butternut squash & lentils. Cook about 15 min. until squash and lentils are tender.
Using an immersion blender or transfer soup to a blender and blend soup.
Add back to pot. Add coconut cream and mix well. Add in chopped chicken and fresh squeezed lime juice.
Salt and pepper to taste. Could top with avocado and more cilantro or pumpkin seeds. For a little kick and help with digestion, add some cayenne powder.
