Gluten and Dairy Free Lightened Up Crab Bisque.

A hearty and delicious soup lightened up from your traditional lobster or crab bisque that has a ton of fat calories.
Ingredients
340 grams lump crab or lobster meat, cooked
1 tsp red curry paste
2 tsp chicken bouillon(use GF if needed)
1 carrot, diced
1 stick celery, diced
1/4 large onion
1 tsp minced ginger or 1/4 tsp powder
1 tsp minced garlic
1 TBSP Worcestershire sauce
1 tsp salt
1/2 tsp paprika
1 can coconut milk
1/4 cup chopped fresh parsley
1/2 TBSP olive oil
5 cups water
Directions:
In a large pan, add olive oil, onion, garlic, ginger until translucent. Add red curry paste, carrots and celery.
Add water, Worcestershire sauce, parsley and spices. Cook about 15 min. until veggies are tender.
Add to a blender or use immersion blender to mix up soup.
Add back to pan and add coconut milk and crab.
Salt and pepper to taste. Could top with avocado and more cilantro.
