Coconut chicken

Serving Size: 6, Macros(for 150 grams): 161 calories 1.5C 6F 26P. In MyFitnessPal as: Coconut chicken-fuel2liv, **rice/asparagus not included in macros.

Ingredients

  • 1.5 lbs chicken tenders(raw, skinless)

  • 1 can lite canned coconut milk

  • 1 lime

  • 2 tsp minced garlic

  • 2 tsp minced ginger

  • 1 tsp salt

  • 1/2 tsp garlic powder

  • 1/4 C chopped cilantro

  • salt and pepper to taste

  • Serve over rice (or cauliflower rice to make lower carb)

Directions

  1. Spray pan with cooking spray. Use kitchen scissors to cut chicken or a knife into small pieces. Add salt, pepper and garlic powder, minced garlic and minced ginger.

  2. When chicken is browned and done cooking, add add coconut milked and chopped cilantro. Bring to a boil and let thicken. Squeeze lime juice on top.

  3. Serve over rice, noodles or cauliflower rice.
