4 ingredient Buckwheat bread

This bread has great macros and anti inflammatory. Made with Only whole food ingredients and no oils, keeping the fats lower. Perfect for those of us with autoimmune diseases and trying to stick to mostly anti inflammatory foods and macro friendly! This goes amazing with soup! Delicious toasted with some nut butter and honey or avocado toast. This definitely doesn’t take the place of traditional bread, but a great alternative when you’re cutting out bread/ grains for a time being……
Ingredients
2 Cups(350 grams) buckwheat groats(organic)
3 Cups water
1 organic apple, diced
1 TBS GF baking powder
1 tsp salt
1 TBS pumpkin seeds(no oil added). Can leave these out or do sunflower seed instead.
Directions
Soak groats in water for 2-4 hrs. Or until water is mostly absorbed. Drain excess water.
Preheat oven to 450 degrees
In a food processor or high powdered blender, add groats & apple. Mix well
Add salt, baking powder and pumpkin seeds
Add parchment paper to a bread pan. Tip:( wad up the parchment paper first and then add to pan. Helps it to stay in place). Spray with cooking spray
Add mixture to a pan and smooth out. Could add some more seeds on top.
Bake for 1 hr. Top will be lightly browned.
Cool completely before slicing.
I love this bread toasted mostly. Add some nut butter and honey or make some avocado toast. Hope you enjoy
