Stuffed acorn squash

Ingredients

  • 1 acorn squash

  • 7 oz chopped chicken(or ground)

  • 60 grams skinny pesto sauce(https://www.fuel2liv.com/recipes/skinny-pesto) or other pesto

  • 3 tsp GF taco seasoning

  • 2 TBS chopped onion

  • 1/4 c chopped tomato

  • fresh parsley, chopped

  • salt pepper to taste

Directions

  1. Prepare acorn squash( make extra for more meals). Preheat oven to 400. Cut squash in 1/2 and scoop out seeds. Add salt and pepper to the inside. Place halves cut side down on a baking sheet. Roast in oven 25-30 min, until tender.

  2. Cook chicken and chop.

  3. To a bowl, add chicken, onion, seasonings, pesto, tomato and parsley. Mix well.

  4. Stuff the squash…. Spoon mixture into acorn squash. Half into each side. Return to oven and bake about 10 min. Top with balsamic glaze if desired. Add salt to taste!
