Chicken salad lettuce cups

This is the easiest, but delicious and filling lunch. Need more carbs? Add some GF crackers, fruit or rice cakes……..

Ingredients

  • 4 oz shredded chicken

  • 1/4 chopped apple

  • 1 celery stick, chopped

  • 1 oz avocado(mashed)

  • 1/4 C chopped cucumber

  • 4 chopped cashews

  • 1 TBS purple onion, chopped

  • 1.5 TBS red wine vinegar

  • 3-4 butter lettuce or romaine leaves

  • pinch of salt & pepper/ tajin(in desired)

Directions:

  • Smash avocado in a bowl. Add chicken( could do canned if it’s organic in water), veggies, apple, cashews & vinegar. Mix well and add to lettuce cups. Add salt and pepper to taste.

    Makes one serving.
