Chicken salad lettuce cups

This is the easiest, but delicious and filling lunch. Need more carbs? Add some GF crackers, fruit or rice cakes……..
Ingredients
4 oz shredded chicken
1/4 chopped apple
1 celery stick, chopped
1 oz avocado(mashed)
1/4 C chopped cucumber
4 chopped cashews
1 TBS purple onion, chopped
1.5 TBS red wine vinegar
3-4 butter lettuce or romaine leaves
pinch of salt & pepper/ tajin(in desired)
Directions:
Smash avocado in a bowl. Add chicken( could do canned if it’s organic in water), veggies, apple, cashews & vinegar. Mix well and add to lettuce cups. Add salt and pepper to taste.
Makes one serving.
