Macro Friendly Protein Pumpkin Cookies

These are so simple, but so delicious. I love that I can have 3 of these cookies and still stick to my macro goals for the day!! These definitely curb that sweet fix without all the calories and fat.

Simple, healthy and tastes good too!!

Ingredients

  • 1 box (15 oz) Gluten free spice cake mix. Could use vanilla cake mix.

  • 1 can pureed canned pumpkin

  • 1 cup protein powder (vanilla would be best). I used Truvani plant based.

  • 1/4 cup egg whites

  • 1/3 cup dairy free chocolate chips

  • 1 TBS coconut oil

  • Optional, add 1/2 tsp nutmeg/ cinnamon

Directions

  1. In a mixer, add all wet ingredients. Mix well. Add dry ingredients. Use a cookie scoop and place on cookie sheet.

  2. Bake at 350 for 10-12 min.
