Sourdough GF/DF banana muffins

These yummy muffins are both gluten and dairy free and macro friendly. Sourdough is a great added benefit for gut health because of the fermentation process, but these would be great without too……..

Ingredients

  • 1 tbsp flaxseed ground

  • 3 tbsp water

  • 1.5 cups oat bran

  • 1/3 cup unsweetened applesauce

  • 1/3 cup pure maple syrup or honey

  • 1 cup unsweetened almond milk or other non-dairy milk

  • ½ cup ripe sourdough starter discard( leave out if you don’t have this and add ¼ C more almond milk)

  • ½ tsp vanilla extract

  • 2 medium bananas ripe, mashed

  • 1 cup gluten free flour( use regular if you don’t need gluten free)

  • 1 tsp baking powder

  • 3 scoops protein powder(my fave dairy free), use code FUEL2LIV for discount

  • 1 tsp baking soda

  • ½ tsp salt

  • ¼ c mini chocolate chips(dairy free if needed)

  • Optional add ins( nuts, additional oats on top, sunflower seeds. log additionally)

Directions:

  • Instructions:  Preheat oven to 350 degrees. Mix flaxseed and water and let sit 5 min.

  1. Add wet ingredients to a bowl( mashed bananas, syrup, almond milk, vanilla and sourdough starter, applesauce.

    In a separate bowl, mix flour, oat bran, baking soda, baking powder, salt, protein powder .

    Combine flaxseed mix, wet ingredients and dry. Mix until incorporated.

    Add liners to a cupcake pan. Use cookie scoop and add fill 3/4. We added a few chocolate chips on top. Bake for 20-22 min.
